These muffins are probably my favourite easy muffins I've ever made. They are sooo delicious!!!! I had to stop myself from eating all of them lol. AND there healthy. Here's the recipe:
3 cups of rolled oats or old fashioned oats
2 tablespoons light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon baking soda
2 large eggs
1/4 cup honey
1 cup bananas, mashed
2 teaspoons vanilla extract
1 cup milk
1/4 coconut oil (measure than melt)
1 tablespoon of whey protein (optional)
1 cup of dark chocolate chips (you can use semi sweet chocolate chips but the dark chocolate are a healthier option)
Instructions:
Makes about 30 smaller muffins.
1. Preheat oven to 350 degrees. Grease a muffin pan with non stick cooking spray.
2. In a large bowl or electric mixer combine oats, brown sugar, cinnamon, salt, baking soda, and protein powder.
3. In a medium bowl combine eggs, honey, mashed bananas, vanilla, milk and coconut oil (melted). Whisk everything together.
4. Add the wet ingredients into the dry ingredients. Stir until combined.
5. Put in chocolate chips into mixture.
6. Scoop batter evenly into muffin tins. (batter will be a little runny than a usual batter).
7. Bake for 30 minutes or until set and top are slightly brown.
8. Allow the muffins to cool for about 10 minutes.
